"Be yourself, because an original is worth more than a copy"
This my favourite salad at the moment, because it is so simple, healthy and delicious. You can have this salad year round if you wanted to too.
I personally use both kale and arugula because I like the vitamins in kale but the bitterness of arugula. You can basically add whatever else you want to to this salad, like mozzarella. But I stay away from cheese because I am lactose intolerant.
This recipe is for a single serving but can be made for groups.
Prep Time: 5 minutes
Kale or arugula salad (or both)
1 Hierloom tomatoes
1 Hard boiled egg
Extra Virgin Olive Oil
Italian Style Seasoning
Salt and pepper
Boil the egg for about 8-10 minutes to get a firm but not 'gray' yolk.
Cut the tomato and egg into wedges.
Drizzle the extra virgin olive oil over the salad, egg, and tomato.
Sprinkle salt, pepper and Italian seasoning over the salad.
